This is one of my easy weeknight dinner go-to's. I am a big believer of oven baked dishes for easy weeknight meals - once it's in the oven I have my hands free again for toddler wrangling- or whatever else is required ;-) Healthy, tasty food doesn't need to be hard or stressful (or have a million and one crazy ingredients) :-) On a side note - I am a plant based eater but my family is not.
