Baked Balsamic Chicken

This is one of my easy weeknight dinner go-to's. I am a big believer of oven baked dishes for easy weeknight meals - once it's in the oven I have my hands free again for toddler wrangling- or whatever else is required ;-) Healthy, tasty food doesn't need to be hard or stressful (or have a million and one crazy ingredients) :-) On a side note - I am a plant based eater but my family is not. I do make them non plant based meals *BUT* I don't cook two completely differe...

The Lazy Cook’s One Pan Baked Risotto

The Lazy Cook’s One Pan Baked Risotto It was another one of those evenings - you know the ones where dinner time creeps up behind you and takes you by surprise? I know, I know - it happens at the same time every day and I should expect it. Sometimes I even plan for it but today the day just got away from me and bam! There it was! Taunting me. I hadn’t planned, I hadn’t shopped and I was at the mercy of dragging my kids through Coles (during witching hour no less) or whatever was in my pantry. Naturally I chose the pantry challenge (because - well, you know!)...

Dairy Free Cheese (Yep & it's YUM!)

So, the other day I was invited for "wine and cheese" with some mums from school. As I don't eat dairy I thought the cheese part might pose a problem (lol). I love cheese, it was one of the hardest things to give up when I transitioned to a plant-based diet. So, my plan was to head off to the vegan supermarket and pick up some cashew cheese as I knew there would be an array of amazing flavours to choose from and they would all be fantastic! Of course I ran out of time and was only able to make it to the regular supermarket. I wasn't giving up that easily - I mean it's cheese! I decided to have a go at my own - I have made cashew cheese before but not the kind that you can slice, but I was (sort of) confident I could pull it off.....

Banana and Walnut Muffins (Vegan & Gluten Free)

It's school holidays here and you know what that means - endless whining of the "I'm hungry" variety! Arrghhh! Time to get my bake on! I want my kids to eat delicious food - but I also want it to have some nutritional value. So I whipped up some Banana and Walnut muffins (recipe adapted from The Minimalist Baker to suit current pantry stock of course). I have to say they were a hit! Here it is - give it a try, it's a good one! Ingr...

Sweet and Spicy Lentils and Rice

What's for dinner? I get plagued by this question from pretty much breakfast time! School holidays seem to amplify this somewhat - or is that just me? Today I was in no mood for grocery shopping and yet didn't want to resort to convenience food full of preservatives and other crap so it was a case of magicking (pretty sure that's not a word but spell check hasn't flagged it so I'm running with it) up something from my current pantry and fridge ingredients. Necessity is the mother of invention, yes? Anyway, I looked in the cupboard and I could totes relate to mother hubbard - things were a bit grim. Luckily it worked out pretty well and ev...

Breakfast Smoothie - The Breakfast of Champions!

Breakfast on the go can be a challenge - well at least it used to be! I used to be the queen of coffee in a travel mug and out the door! Not surprisingly I then would find myself starving at 10am and reaching for a muffin or banana bread or something laden with fat and sugar to keep me going. NOT ANYMORE! These days smoothies are my go-to on busy days when I need to be up and at em but still want my day to start off right - and who doesn't want that? Protein, healthy fats ...

(Surprisingly) Instant Chia Pudding

It happened - my first real struggle with my new choice to be vegan. Of course it was my sweet tooth causing the problem - I wanted chocolate and I wanted it bad! I was a bit grumpy over not really having anything in the house to deal with the chocolate craving so I got ready to make some chocolate chia pudding...

Butternut Pumpkin (Squash) and Cauliflower Empanadas

So last week (I know it's been like 5 days and I am only just getting to this now!) I had the day off work. This is awesome, I was thinking. I will have loads of time to think about and prepare dinner. You see, I have embarked on a new food journey - taken the leap from vegetarian to vegan. I know some of you maybe thinking "what's the big deal? Isn't it pretty much the same?". Well actually the truth is - nope. Totes not the same - I had no idea how many recipes I used (and loved) that had some form of animal product in them. So anyway- now dinner takes thought, planning and preparation and as a working mother of two kids sometimes it's enough ...
