(Surprisingly) Instant Chia Pudding

It happened - my first real struggle with my new choice to be vegan. Of course it was my sweet tooth causing the problem - I wanted chocolate and I wanted it bad! I was a bit grumpy over not really having anything in the house to deal with the chocolate craving so I got ready to make some chocolate chia puddings for the next day (can't say I don't learn from my mistakes!).

Well the last lot of Chia puddings I had made didn't blend as well as I had hoped (after the overnight soaking in the fridge) so I thought - maybe I should pre-blend (before the fridge) and then blend again after... Woo hoo instant pudding discovery! It was like winning chocolate lotto!

I was fully expecting the pudding to stay liquid after blending and need to set overnight - I was very pleasantly surprised when I found that it actually thickened up immediately and was pretty much ready to eat. It was slightly warm from all the blending so I did pop it in the fridge for 10 minutes or so whilst I sliced some strawberries etc for the top. OMG this is the best! Creamy and decadent and actually quite good for you - winning!!



1 & 1/2 cups of non dairy milk (I use Oat milk for me and Almond/coconut for Dave)

1/3 Cup white chia seeds (I am a weirdo about the black ones - I can see them in there!)

1/4 cup of cocoa or cacao (I have used both and both are fine)

3 Tbsp Maple Syrup

1 tsp vanilla bean paste (or extract)

1/2 Tsp cinnamon


Add all ingredients into a high speed blender (or thermomix etc) and whiz until combined and smooth. The longer you blend for the smoother it gets, although the warmer it will get too. Pop it in the fridge for a few minutes and then decorate with fruit, berries, coconut, nuts - the world is your oyster!

Afterwards I was thinking that I should have added a few drops of doTERRA essential oils to flavour it. It would be a really cool way to change it up from time to time...
