So it's happened - Chloe has learned how to say "Chicken nuggets" and it seems that it is ALL she is willing to say when she's hungry! She says it in such a super cute way but boy do I wish that she hadn't learned it.... These little broccoli dippers were invented on the fly when I was desperate to get her to eat something (and all she wanted was chicken nuggets). She was pretty happy with the result and so was Max (my eight year old). Max is pretty discerning and is not easily fooled by smuggled veggies but he wolfed these down no worries. I had a sneaky taste too and I have to say - not bad!
2 potatoes peeled and grated
1/2 head of broccoli finely chopped
1/2 cup breadcrumbs (gluten free)
1 chia egg (1 tbsp chia seeds and 3 tbsp water left to gel)
1 tsp onion powder
1/2 tsp garlic powder
1/4 tsp salt (I use pink Himalayan rock salt)
Squeeze as much water as possible out of the potato as you can then combine together. Form little patties on a baking tray lined with baking paper and bake in a pre-heated oven at 200 degrees C for 25 mins!
